Eating Out in Istanbul: What to Order at Any Restaurant

Istanbul sits at the crossroads of two continents and has fed empires for centuries. The result is a food culture of extraordinary depth — Ottoman spice-route dishes, fresh Bosphorus fish, wood-fire bread, and the world's most elaborate meze tradition. It is also a city where menus are long, many dishes share names with dishes elsewhere, and the quality varies wildly by neighbourhood.

Start with meze — always

A Turkish meal begins with meze — a spread of small cold and hot dishes that arrive before the main. At a proper meyhane (tavern), a waiter will simply bring a tray of choices and you point at what you want. At a restaurant, meze are listed separately. Order at least 3–4. The bread arrives continuously throughout.

Never skip the meze course to “save room.” The meze IS the meal. Grilled meat comes after, not instead.

Doner meat over pita bread, topped with tomato sauce, browned butter, and yoghurt. Rich, heavy, unmistakably Turkish.

Lahmacun

Thin flatbread topped with spiced minced lamb. Rolled up with onion, parsley, and a squeeze of lemon. Order two per person.

Baklava from Karaköy Güllüoğlu

Fresh baklava — pistachio or walnut, soaked in syrup, not honey. The finest version in Istanbul is at Karaköy Güllüoğlu. Worth the queue.

The unwritten rules of Istanbul restaurants

  • Raki or çay, not wine. Raki — anise-flavoured spirit — is the traditional drink with meze. If you're not drinking alcohol, order çay (Turkish tea). It arrives in small tulip glasses throughout the meal.
  • Prices double near Sultanahmet. The tourist district has good restaurants, but you'll pay double for the view. Walk into Beyoğlu, Karaköy, or Moda for better food at half the price.
  • Breakfast is a meal. Turkish breakfast (kahvaltı) is elaborate — cheeses, olives, eggs, honey, tomatoes, and fresh bread. Many restaurants open just for breakfast from 9am.
  • Don't rush the tea. After a meal, tea arrives. It's not a signal to leave. Sit with it. The bill comes when you ask.
